Ingredients
  

  • 1 lb 450 g lean beef steak (sirloin or flank), thinly sliced
  • 2 bell peppers any colors, sliced
  • 2 cloves garlic minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil

  1. Slice the beef thinly against the grain.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the beef and cook for 3–4 minutes until browned.
  4. Stir in the garlic and cook for about 30 seconds until fragrant.
  5. Add the sliced bell peppers and cook for 4–5 minutes, stirring frequently, until they're tender-crisp.
  6. Pour in the soy sauce and toss everything together until evenly coated.
  7. Serve immediately on its own or with rice, quinoa, or cauliflower rice.

  • Freeze the beef for 15–20 minutes before slicing to make thin slices easier.
  • Don't overcrowd the pan—cook the beef in batches if necessary for a better sear.
