- Heat a non-stick pan over medium heat. Add the drained black beans and season with salt, pepper, and a squeeze of lime juice. Cook for 4–5 minutes, stirring occasionally, until heated through and slightly crispy.
- Warm the corn tortillas in a dry pan for 30–40 seconds on each side until soft and lightly charred.
- Assemble the tacos: layer shredded red cabbage on each tortilla, followed by the warm black beans.
- Top with fresh avocado slices and a small dollop of sour cream.
- Finish with an extra squeeze of lime juice and serve immediately.
Notes
- Make it spicy: Add a pinch of chili flakes or a drizzle of hot sauce to the beans while cooking.
- Extra protein: Stir in ½ cup of corn kernels with the black beans.
- Vegan option: Swap sour cream for coconut yogurt or guacamole.
- Storage: Black beans can be stored in the fridge for up to 3 days. Assemble tacos fresh for best results.
